ORIGIN
Grown at high altitudes in the Colombia Aguadas mountains, the cooler climate means the coffee cherries take longer to ferment, enhancing the depth of flavor. The classic washed processing method is complex, and farmers have mastered the art of harvesting only perfectly ripe fruit and monitoring an extended fermentation to ensure the best aromas develop. This dedication results in a juicy, fruity coffee with hints of candied apples and red berries.
ROASTING
We use a split roast technique for this Vertuo coffee. Most of the Colombian Arabica is lightly and quickly roasted to preserve its vibrant fruity notes, while a small portion is roasted longer to add complexity and balance to the cup.
